Citrus flavours by Cass Bailey

It’s National Baking Week this week so I thought I’d share with you one of my favourite cake recipes – St Clements Cake.

I love to bake St Clements cake, especially at this time of year because the lovely citrus flavours of the lemon and orange juice remind me of Summer which is perfect for when the weather outside is cold and miserable like it is at the moment.

Here’s how to make it:

Ingredients for the St Clements cake:

  • - 225g butter or margarine
  • - 225g sugar
  • - 4 medium eggs
  • - finely grated zest of 2 lemons and 1 orange
  • - 225g self-raising flour


Ingredients for the St Clements drizzle topping:

the juice of 1 lemon and 1 orange
85g Sugar

  • - Pre heat your oven to 180c.
  • - Beat the butter and sugar until they look pale and creamy.
  • - Beat in the eggs.
  • - Fold in the flour and the lemon and orange zest.
  • - Pour into a greased baking tray or cake tin and bake in the oven for around 45-55 minutes.
  • - When the cake comes out of the oven, mix together the lemon juice, the orange juice and the sugar and spoon over the top of the warm cake.  The juice mixture soaks in to the cake and leaves the sugar to go crispy.

I’ve also made this as a Halloween orange cake before, by replacing the lemon with another orange and drizzling some dark chocolate over the top of the cake, in the shape of a spiders web when it’s cool.

And we’ve also made the mix into smaller cupcakes but don’t forget to reduce the cooking time accordingly if you do this.
